Chef Olivier Elzer Joins Pink Pearl Restaurant in Phu Quoc as Chef Consultant

Phu Quoc's fine dining scene gets a delicious update with the refreshed Pink Pearl by Olivier E at the JW Marriott Phu Quoc Emerald Bay Resort & Spa. The restaurant menu's transformation is led by Michelin-Star Chef Olivier Elzer, who brings his 27 Michelin Stars and 17 years of culinary expertise to create a menu that blends French cuisine with Mediterranean influences.



The shift from Pink Pearl to Pink Pearl by Olivier E signifies more than just a name change. The restaurant is stepping up with a fresh à la carte menu and Sunday brunch starting today (March 16), welcoming resort guests and other travellers eager for new culinary delights.


Olivier is widely regarded as one of the most gifted chefs of his generation, renowned for his modern French cooking. Having trained under legendary French chefs such as Pierre Gagnaire and Joël Robuchon, Elzer has honed his craft in some of the world’s most prestigious kitchens. His career has taken him to gourmet capitals like Hong Kong, Taipei, and Macau, where he has consistently pushed the boundaries of modern French cooking. Now, as the Chef Consultant at Pink Pearl by Olivier E, he brings his innovative vision to Phu Quoc, creating a menu that reflects his love for traditional Mediterranean recipes while incorporating contemporary techniques and local Vietnamese ingredients.



For instance, the Yellowtail dish featuring locally-sourced yellowtail fish served raw with cucumber, dill and lime for a refreshing starter. For the main courses, fresh seafood takes centerstage. The red mullet bouillabase comes with aioli toast and artichoke caught our eye but we wouldn’t say no to trying the salt-crusted sea bass with spicy tomato and lemon mashed potatoes!


The restaurant's menu includes two separate experiences. For a more relaxed evening, guests may choose from the à la carte options starting at $80 USD per person. If you're curious to savour more of Chef Elzer's creativity, the premium seasonal menu is available for $100-$120 USD per person, showcasing his signature dishes crafted from the best seasonal ingredients. Chef Olivier’s menus can also be paired with fine wines curated by Master Sommelier Bertrand Lutaud.



Pink Pearl by Olivier E isn't stopping at dinner. The upcoming Sunday brunch is designed to be an experience that brings people together. The brunch sharing menu comprises several dishes to share, from fresh seafood plates to baskets of mini pastries and breads, with an option to choose your own hot starters and mains.


During our visit in December 2024, the Pink Pearl was previously only open for dinner, but we always felt that the restaurant’s beautiful pink décor, the luscious green gardens and warm ambiance was perfect for daytime meals as well.



With its refreshed concept and elevated menu, Pink Pearl by Olivier E is poised to become a must-visit for travellers. Chef Olivier’s arrival in Phu Quoc is not just a milestone for the Pink Pearl but a testament to the island’s growing reputation as a hub for world-class cuisine.
