Spondi


They hold a special place in the my heart as one of Athens’ most historic restaurants. Recognised as the city’s first major dining establishment, it has served as a culinary school for many renowned Greek chefs. Its legacy and tradition inspires me, reminding me of the rich history and evolution of Greek cuisine, and reinforcing the timeless value of classic culinary techniques.

Located near my own farm in Corinth, Kavos is celebrated for its incredibly fresh fish, seafood, and vegetables. The close connection to local produce and the sea makes every dish a true representation of Mediterranean bounty. For me, Kavos embodies the essence of farm-to-table dining, where the freshness and quality of each ingredient are paramount (just outside Athens but work the trip).
