Three Sheets Soho and Dalston's Max and Noel Venning On London's Vibrant Cocktail Scene

With a combined 30 years of industry experience, brothers Max and Noel Venning have become key figures in London’s cocktail scene. As the masterminds behind Three Sheets Dalston and Three Sheets Soho, which opened in March, they know what it takes to create a standout bar. We chat with the co-founders on what brought their vision to life.

Can you describe the concept behind Three Sheets and what it means to you?


When we opened Three Sheets in Dalston, the idea was to open a bar for London and of London, not a heavy conceptual bar. We wanted a minimalist space, characterised by its clean and simple design, echoed by the drinks. When we opened Three Sheets Soho in March, it felt like a natural progression and extension of this.


We've put a lot of effort into the drinks and believe them to be some of the best in the world. We also have a good French wine list and 6 champagnes by the glass. On the food, we’re keeping it streamlined and effective, serving oysters, chips, and salt beef sandwiches. Owning the bar as brothers means the world to us, we have worked together on a few other businesses and have such a strong connection to the brand.



What inspired you to open Three Sheets and launch a new site in Soho?

 

Back in 2016, we weren’t actively looking for a site, but the space in Dalston came up, and the rent was so good that it felt like a no-brainer. We developed the ideas behind what we wanted to do, with simplicity and confidence at the core of everything we present to our guests. 


Elegant serves that belie the work behind the scenes, alongside accessible flavours. In Soho, we have gone for a higher spec finish, with a broader menu, maintaining the neighbourhood vibe. We want people to feel comfortable and have a good time. 




What do you hope to bring to Soho that is ‘uniquely Three Sheets’?


There are some great bars in Soho, so hopefully, we’re a good addition to the area, with a good busy vibe but plenty of space for our guests, and some great drinks. We place a big focus on hospitality and want everyone to feel welcome and have a good time. 


What is your favourite cocktail on the menu?


It depends on my mood or the time of day, but we definitely love the Dirty Martini. It's such a well-balanced drink. If not that then the Rhubarb and Sake is fantastic. 



How would you describe the scene and ambiance at Three Sheets?


It's always buzzy and always good energy. It feels light and airy in the day and dark and moody in the evening. There is always laughter in the room and we try to generate a positive atmosphere all the time. The team is so great and they really want to make sure everyone is having fun. 


What drink would you recommend to a first-timer guest at Three Sheets?


We would recommend the French 75. We’ve updated the recipe a bit, but it’s been on the menu since day one, and for sure it's our signature drink.
